Introducing the Chef

I trained at Torquay Chefs College from 1981 to 1983. Went to London in May 1983 and trained the hard way with the best at Covent Garden restaurants, South Kensington hotels and Private homes. Left London and went into the exclusive Country House hotel scene.

Head Chef at 21 at The Greenway in Cheltenham. 2 Food Festivals followed in Manhattan, New York two years running. Head Chef at Charingworth Manor, North Cotswolds for 5 years followed by Head chef at my 1st pub ‘The New Inn’ Coln St Aldwyns. Many more awards followed and I met my wife Holly.

Our 1st Restaurant on our own in Dartmouth South Devon followed by my own two pubs in the Cotswolds again winning many more food awards. New Zealand and a new life beckoned in 2012, The Moutere Inn, Upper Moutere, Nelson to set us on our way in our new life, The fabulous Mahana Estates Winery and the King and Queens visit in 2015!

My own takeaway in 2016 ‘Ruby Bay Kitchen’ My vision is to take takeaway food to new levels and heights. I achieved that. NOW my own cookery school giving back everything I’ve learned. I hope to now pass on some of my knowledge and experience to you. Tony
